The GT is equipped to handle any coffee you throw at it with a set of three automatic low-flow pre-infusion cycles with both active and passive pre-infusion phases as well as a fully manual mode which gives you complete control over both. The GT accomplishes all this and more thanks to a custom designed control board that unlocks unparalleled features in combination with incredible dual boiler performance. It also features a custom designed and externally accessible OPV, which allows you to customize extractions by setting your brew pressure within a wide range of 3 - 15 bar.
The GT’s low-flow pre-infusion is its most exciting feature. Press and hold the toggle to initiate a low-flow pre-infusion at around 3 grams per second, which the machine times for you. Once you’ve reached your desired pre-infusion time, release the toggle and the GT begins timing your soaking period, during which water is allowed time to soak into the puck before extraction. Then, just press the brew toggle to begin your full-pressure extraction. For the North American version of the Classic GT, the three automatic pre-infusion cycles are as follows:
- Dark: 2 second low flow / 1 second soak
- Medium: 8 second low flow / 3 second soak
- Light: 12 second low flow / 3 second soak
The Classic GT is also equipped with a flow meter and can be programmed to pull automatic shots volumetrically, a feature that can be combined with the pre-infusion cycles for unparalleled automatic brewing.
The GT is designed and built entirely in Italy from commercial-grade components. Its stainless steel housing is remarkably thick, providing serious protection for the internals: a 3.38 oz eco-brass brew boiler and 0.9 L stainless steel steam boiler. In our testing, the GT is capable of pulling multiple back to back shots with minimal impact on temperature stability. When it comes to steaming, the GT impresses, too. Gaggia built a custom steam valve just for this machine made of heavy duty brass with the Gaggia logo. There are four steam temperatures: 248°, 257°, 266°, 275° and it takes just 20 seconds to heat 5 oz of milk to 140°F at the highest setting. The GT also uses a fast heat up feature that gets you brew-ready in just five minutes and full steam power in seven.
When not steaming, the Classic GT can be switched into a lower temperature hot water mode which reduces the steam boiler temperature to eliminate excess steam and sputtering when dispensing hot water for Americanos. This can also act as a power saver as it lowers the steam boiler temperature, but will allow for quick heat up to full pressure.
Settings are adjusted using a large, easy-to-read, color-TFT screen with a series of highly-responsive capacitive-touch buttons. This menu allows you to adjust brew and steam temperatures, select one of three automated pre-infusion profiles, daily wake-up scheduling, shutoff timer, eco mode, Fahrenheit or Celsius measurement, and more with ease.
